The idea of keeping old players on full player contracts just “to help the young players along” eg. if Shaw arrives then Evra should stay to help him, is flawed.

Let the new manager and his coaching staff do their job, their way. Evra should only stay if the manager sees a serious role for him as a player. Otherwise he should go. The mentoring thing is overblown.
